Abstract The aim of this research is to investigate the suitability to hard, semi hard and soft cheese production of raw milk from native goats raised in Tunceli Province. The data was obtained from a Native kıl goat herd in Beydamı village of Pertek County of Tunceli Province. The total fat levels of milk were consistent with soft, semi hard and hard cheese production standards. However, the protein rates in milk were low for stated standards for soft cheese type. The protein rates were favorable for semi hard and hard cheese production. Further researches are needed to collect information about biochemical components in goat milk from different animal breeds in Turkey.
