Abstract L-glutamic acid and poly- γ-glutamic acid are important glutamic acid derivatives for food industry. They have thickener, humectant, reducing bitterness properties. These materials that are used as animal food additives and aroma agents in industry are produced accomplishedly as fermantative by using various microorganisms. In this review informations are presented about using strains, the effects of fermantative conditions, media compenent in fermantative production of glutamic acid derivatives and their areas of usage.
